I was recently trying to come up with something different for an after dinner treat and I decided to try out individually sized cheesecakes. I wrote up the recipe for these Sweet Potato Cheesecake Cupcakes, which are super simple to stir together and bake, over on recipe.com and I am already looking forward to making them again. They have a subtle sweetness from the sweet potato, low added sugar, and a simple graham cracker crumb topping—so they are great for both kids and adults.
