Make your Monday a little easier with a no-cook dinner that's perfect for a warm summer night—and your hungry and discerning toddler! Assembling a collection of foods onto a plate can sort of feel like cheating, but I say we stop feeling guilty about not always having the energy to cook every night and embrace the idea that it's okay to make things easier.
The other day my girl told me that she had "little trees" at school with her pasta but that they were not a veggie. Whatever you say my dear! She's always loved broccoli, and we've been lucky to have some growing in our garden this summer, so that was the start of this dinner.
In this no-cook meal:
- Cottage cheese--use 4% fat if you can find it since toddlers need fats!)
- Diced leftover pancake--I had some in the freezer, but you could also do a toaster waffle or regular toast.
- Sliced apple--1/4-1/2 of a medium apple is a serving size for a toddler, so don't stress if they only eat a few slices! (Check out my Toddler Nutrition Guide for a quick-glance refresher on serving sizes.)
- Softened broccoli: Bring a pot of water to a boil (I use a tea kettle). Chop broccoli and add it to a heat-proof bowl. Pour boiling water over top and let it sit for 4-5 minutes. Drain and pat dry. Drizzle with olive oil or a little butter.
This is sort of a take on breakfast-for-dinner, but it's also just to show that a somewhat random assortment can make a great dinner of finger foods!
