Meals for little ones are often more successful when they are simple—and that goes for packed lunches too. I find that when my girl can clearly see what's in the food on her plate, she's happier, and this has become more important as she's gotten older.
I think it can be hard for kids to try new foods because there are so many things that they haven't had in their short little lives, or things that they ate with regularity when they were a baby but now simply don't remember. And let's face it, foods don't always taste how we think they should based on looks, so it's reasonable for kids to be wary. For lunches, as much as possible, I try to stick to the idea of simple is better. And that's the case with this meal.
Here's what's in this packed lunch idea for daycare, preschool, or a day on the town:
- Steamed beets
- Honeydew melon
- Sungold cherry tomatoes
- Sweet Potato Muffin: These are based on this recipe, though without the frosting. They are a more delicate muffin, but they are naturally sweet, and easy for little ones to eat.
Serving this with milk would add some calcium and protein, or you could swap in some cheese or salami slices for one of the produce items if you prefer.
