This is the sort of lunch I like to pack when I can't for the life of me think of what to pack. It's a simple assortment of foods that little ones tend to like—and at two of the foods can stay in the freezer until you need them.
I've been thinking a lot lately about how often I overthink the meals we serve in our house. I like to think that I've been getting better about this as I've realized how much more L likes simple foods—and since it's summer, so many ingredients do taste so good on their own. A side dish of sliced cantaloupe or watermelon is perfect. As is a simple meal with one fruit, one veggie, one carbohydrate, and one good source of protein.
Here's what's in this lunch:
- 2 mini muffins: These are the muffins from yesterday. They freeze nicely and last in the fridge for a few days, so either way you can make them ahead of time.
- Peas: frozen, thawed either overnight in the fridge in the lunchbox (if you pack it ahead of time) or quickly in a bowl of warm water.
- Grapes: halved and organic when possible. (I don't mean to sound fussy about organic grapes, but grapes are one of the conventional fruits that notoriously has a lot of pesticide residue.)
- Cheese: small cubes are shown here, though slices or shreds work too.
Serve this lunch with milk or water as your kiddo likes.
