As we head into Thanksgiving week in a few days, I've been working on our meal plan and grocery list to do my best to stay organized (and sane). I thought I'd share a look at what we'll be eating, including a few of our favorite holiday foods.
My goal for Thanksgiving is to include a few things (like 2-3) that I think my older daughter will eat, but to generally not worry much if she doesn't want to try everything. I figure that she'll grow to love our food traditions as much as the rest of us do, but it might take some time. And by spending some time planning out the meals for the rest of the long weekend, I can make sure that there is plenty of yummy food for her to eat in the bigger picture.
My parents are coming for the long weekend and another family of 4 is joining us for Thanksgiving dinner, which is why you'll see some breakfasts on this meal plan. I figure that if I don't think through all of the meals I'll forget something important from the store!
Important note: The turkey recipe here is the only one I've ever made—it's crazy easy, so flavorful, and it cooks faster since you split it in half. It's actually from a magazine that I edited a few years back and I highly recommend it!
Sunday: Potato and Ham Soup (a recipe I'm developing)
Monday: Pasta with Pesto and white beans
Tuesday: Skillet Enchiladas with tofu (a recipe I'm developing)
Wednesday: Slow Cooker Black Bean Soup, Pumpkin Muffins
Thursday breakfast: oatmeal with Roasted Apples
Thursday lunch: Leftover Slow Cooker Black Bean Soup
- Lemon-Thyme Split-Roasted Turkey
- Slow Cooker Cinnamon Mashed Sweet Potatoes
- Shaved Brussels Sprouts Salad
- Butternut Squash Pie with an Immaculate Baking Co crust leftover from work and whipped cream
- Stuffing, rolls, and apple pie (from friends)
Friday breakfast: scrambled eggs, Pumpkin Bread, oranges
Friday lunch: Thanksgiving Leftovers
Friday dinner: Homemade pizza
Saturday: Asian Turkey Noodle Soup with Rice Noodles
Of the Thanksgiving food, I think L will eat the turkey, applesauce, and rolls. I realize that I could add green beans and regular potatoes to the menu since she likes both of those things, but I'm trying to make sure I don't make things too hard on myself. It's a fine line, right? And I plan to let the baby try the sweet potatoes and applesauce.
