We picked the mother load of apples a few weeks ago and it's been quite the challenge to put them to good use. This Apple Date Cake, which has come in handy at snack time this week, is our latest favorite use for apples—packaged in a super moist and surprisingly good-for-you package.
The base of this cake is rolled oats and there are eggs and a little nut butter in the mix for a boost of protein. It's yummy on its own, with some maple syrup added to the batter, with some milk, or topped with a little maple-sweetened cream cheese. (It's really, really good with maple-sweetened cream cheese!)
