Family Meal Plan
This meal plan includes 7 kid-friendly dinners that adults will like too, starting with a fun Sunday dinner to celebrate the holiday. And scroll down to find a few easy and healthy ideas for breakfast and snack time!
Sunday: Easy Fish Tacos with Fruit Salsa
Try this easy, and delish, dinner for Cinco de Mayo!
Monday: Broccoli Cheesy Rice
This is a one-dish meatless main, though you can of course add a protein on the side such as chicken tenders, baked tofu, or a fish you like.
Tuesday: Sweet Potato Hash
Make this with whatever kind of eggs your family prefers!
Wednesday: Instant Pot Chana Masala
I like to serve this with rice, plain yogurt and diced cucumbers to ensure that the kids have plenty to eat even if they decide not to go for the main dish. (But it’s so darn good! You may want to skip the spicy pepper OR pick up a masala simmer sauce and simply stir it together with chickpeas!)
Thursday: Lentil Stew with Rice and Fruit
With just enough flavor to keep things interesting for the adults, but not too much for the kids, this is an easy weeknight meal packed with vegetarian protein and iron.
Friday: Pita Pizzas with Pesto and Cheese
Pick up some ready-made pita bread rounds, top with pesto (or pizza sauce) and shredded pizza cheese, and bake in an oven or toaster oven until warmed through. I usually do 350 degrees F for about 4-6 minutes.
Saturday: Free Choice!
Let the kids choose what they want for dinner and make it together…or order it in!
