Family Meal Plan
I’m going to try something different this month and do all of the meal plans for the month together. To be honest, this is mostly to make it easier on myself to do these posts with my own vacation schedule, but I want to see if it helps you to have a bigger picture view when planning your meals. Please let me know if you have a preference in the comments!
June 30-July 6
Sunday: Ratatouille Pasta
Make a big batch with fresh veggies and stash some in the freezer for a future meal.
Monday: Vegetable Fritters with Whole Grain Bread
Try them with ketchup or salsa!
Tuesday: Refried Bean Taco Roll Ups
Do this with store-bought refried beans or homemade, your choice!
Wednesday: Sweet Potato Chicken Nuggets with Beets and Rice
My kids love the flavor of jasmine rice or short grain brown rice.
Thursday: Favorite Grilled BBQ Foods!
Happy 4th! I’ll leave you to your traditions! (We’re doing Applegate hot dogs, baked beans, corn on the cob and watermelon!)
Friday: Pita Pizzas
We’ve been eating these a lot lately—easy and yummy!
Saturday: Kale Pesto Pasta
Swap in kale to make a kid-friendly green sauce for pasta that’s ready in minutes.
July 7-July 13
Sunday: Easy Marinara Sauce with Extra Veggies and Pasta with White Beans
Add a can of rinsed and drained canned beans to this simple meal to add plant-based protein.
Monday: Grilled Veggie Sandwiches
I love how easy this idea is to deconstruct and serve the components side-by-side for the kids!
Tuesday: Baked Potato Nachos
Pick up some new potatoes and make this easy sheet pan dinner.
Wednesday: Tofu Nuggets with Carrot Fries and Rice
Use extra-firm tofu for soft, yet crunchy nuggets that are perfect for dipping in ketchup or Ranch.
Thursday: Instant Pot Burrito Bowls
You could also wrap the filling in a tortilla to make regular burritos!
Friday: Hot Dogs and Corn
I like Applegate or the store brand from Whole Foods.
Saturday: Slow Cooker Pulled Pork Sandwiches
Add coleslaw or a side of watermelon for an easy summer dinner.
Sunday: Coconut Rice with Homemade Fish Sticks
Add a side of steamed broccoli to round out this Sunday supper.
Monday: Broccoli Pesto Pasta
Make this with spaghetti noodles or a short noodle like rotini. It works either way!
Tuesday: Steak Fajitas
Thinly sliced steak is a great source of iron and protein for everyone. (Vegetarian? Try scrambled eggs or tofu instead.)
Wednesday: Salad Pizza
Serve this as indicated on the recipe or side by side for the kids.
Thursday: Baked Chicken Nuggets with Roasted Potatoes or Fries
We love the Alexia brand of rosemary fries! Add some summer melon to complete this meal.
Friday: Snack Plates
Clean out the fridge and pantry with a balanced mix of snacky foods for dinner!
Saturday: Zucchini Burgers
Sunday: Crispy Baked Chicken Tenders, Quinoa, Roasted Veggies
Pick the veggies your kids like best tonight. Sprinkle with grated Parmesan if you’d like!
Monday: Stovetop Mac and Cheese
Add some fruit and let this dinner be an easy one.
Tuesday: Rice and Instant Pot Pinto Beans
We like these bowls with diced tomatoes, shredded cheese, sour cream, and salsa.
Wednesday: 20 Minute Stir Fry Noodles with Sesame Tofu
Use spaghetti noodles or rice noodles.
Thursday: Skillet Taco Pasta
