Healthy Family Meal Plan
Even if you have a busy week ahead (we have softball three nights this week, right during dinner…oof!), these meals will have you on your way towards healthy eating. Lots of them can be made or prepped ahead too!
Sunday: Instant Pot Ribs, Corn on the Cob, Fruit
Make a special Sunday supper the easy way by letting the Instant Pot do the work. (This would likely work really well in a Slow Cooker too set on low for 7-8 hours.) Serve with sweet corn on the cob and fresh fruit like watermelon.
Monday: Baked Chicken Nuggets, Quick Sauteed Carrots, Rice
We’ve been loving this meal lately—my kids like it with jasmine rice best—and I love that I can make the rice and carrots ahead if I find time earlier in the day.
Tuesday: Sweet Potato Nachos
Trade sweet potatoes in for regular in this recipe for a vitamin (and cheese!) packed meal.
Wednesday: Cheesy Pasta with Corn
I pulled this recipe out of the latest issue of Bon Appetit because Deb Perlman is always so good with dinner ideas. (I’m gonna decrease the pepper in this one, though, way down to almost none!)
Thursday: Lamb and Rice Bowls with Cucumber Sauce
Deconstructed grain bowls are super easy to serve and for kids to eat. We love this combination—especially with the super quick cucumber sauce on top.
Friday: English Muffin Pizzas
Yay! You made it to Friday! Celebrate with an easy take on pizza night.
Saturday: Peach Chicken Salad
Fresh peaches are just hitting stores so pick up a few and pair it with some rotisserie chicken, fresh veggies, cheese, and seeds.
We like a simple lemon vinaigrette with this: Combine 1/4 cup fresh lemon juice, 1/2 cup extra virgin olive oil, 1/2 teaspoon Dijon mustard and a pinch of salt. Mellow, yet flavorful!
