Cooking dinner in the summer can feel like a challenge with everything going on, but these easy family dinners will hopefully help you feed your people without too much effort.
Family Meal Plan for the Week
Where we live, it’s light out way past 9, so sometimes the evenings feel a little endless. And while this means that we’re often eating dinner later than at other times of the year, I still try to have easy dinners planned to help us eat well no matter what we’re up to. So whether you have t-ball, swimming lessons, are just getting back from vacation, or any other busy days going on, I hope this week’s family meal plan helps you get ahead!
Try this classic in the Instant Pot for a much easier way to get dinner on the table. You could even use precooked rice from the store!
Monday: Roasted Broccoli Grilled Cheese
You can of course do regular grilled cheese with the roasted broccoli on the side if you prefer!
Tuesday: Spinach Quesadillas with Crockpot Refried Beans
I like to make big batches of beans and keep them in the freezer, portioned out for individual meals, to pair with simple quesadillas on Tuesdays. Then there is plenty of different foods for the kids to choose from.
Wednesday: Moroccan Lamb Meatballs with Cucumber Sauce
These have been a favorite of ours lately as we’ve been getting fresh lamb from a local farmer. They have veggies and fruit right in the meatballs for a sweet and savory flavor that pairs really well with the simple cucumber sauce. Serve over a favorite grain or buttered pasta.
Thursday: 4-Ingredient Sausage Pasta with Broccoli
Easy and yummy, which in my book is perfect for almost-the-weekend.
Friday: DIY Snack Plates
It’s Friday, skip cooking! Make yourself a cheese plate (with a beer or some wine!) and let the kids assemble snack plates with foods from each food group. And maybe eat them outside for minimal clean up.
Saturday: Grilled Salmon Foil Packs with Rolls
I’m always nervous about cooking fish, but this type of foil pack makes it easy. Pair it with rolls for a simple, fresh dinner. (Or do your favorite burgers or hot dogs tonight!)
