I know that it's now technically fall, but we still have piles of tomatoes. This recipe for Slow Cooker Marinara Sauce is one of our favorite ways to use them up—and enjoy a dinner packed with nutrition.
The marinara sauce includes tomatoes of course, but there are also other seasonal veggies in the mix. In this batch I did yellow squash, garlic, and onion, but even butternut squash would work too. All of the ingredients are simply dumped into the slow cooker, left to simmer, and pureed before tossing with pasta.
This recipe has the comfort of fall with the flavors of summer. I hope you love it as much as we did.
