Just like with my first pregnancy, I've been craving all things cold—especially fruit, which I prefer frozen. Miss L has benefited from this since we've been having more freezer pops and frozen treats like this Instant Frozen Yogurt.
To me, this is the perfect dessert or afternoon snack because the fruit is balanced with some protein, which means that you won't need to worry about a sugar crash. (Related, my daughter on a sugar crash is a royal mess of tears and frustration, so I try to avoid it at all costs!) You can do this with any type of frozen berries, mango, or pineapple, depending on what you think you and your family will like. And while I used vanilla yogurt here, you can also opt for plain and sweeten it with a little honey and a touch of vanilla if you prefer.
If you don't have a high-powered blender like a Vitamix* or a Blendtec, you might have better success with this in a food processor. (You might also want to let the fruit thaw a bit if that works better for your machine.) Otherwise, let the power of your blender do all of the work and enjoy this frozen treat anytime the urge strikes!
Instant Frozen Yogurt
Serves 1-2 toddlers
1 cup frozen berries (or mango or pineapple)
1/2 cup vanilla Greek yogurt
Combine the ingredients in a high powered blender. Blend until very smooth, stopping to scrape down the sides as needed (and using the stick attachment with a Vitamix). Serve immediately or freeze into freezer pops.
