If you’re finding piles of sweet corn at farm stands near you, put them to good use in this flavorful and super easy Grilled Corn Salsa. We enjoyed this recipe last week when I made it for a post on the Better Homes and Gardens food blog and while it’s excellent served with tortilla chips, we liked it even better with breakfast tacos.
Since eating a breakfast taco can be a messy affair even for adults, I serve them deconstructed to my little girl. Simply place all of the components on a divided plate, serve with some torn tortillas, and let them have at it. It’s a really nourishing way to start the day that tastes pretty great too.
