If you’re ever craving freshly baked muffins to share with your family, but you’re running low on energy, a package of egg- and nut-free Blueberry Muffin Mix from Cherrydale Farms might be a good thing to keep on hand. The company kindly sent me a box to try recently and it was just the thing to help me bake something in my kitchen without too much effort—first trimester pregnancy fatigue is no joke!
I don’t regularly buy baking mixes (okay, I never do), but I have to admit that having one did make it a lot easier to put these together after dinner one night. And the ingredients in this one are straight forward and identifiable, which was reassuring. They use a plant-based egg substitute and the mix is made in a peanut-free facility.
The recipe for the muffin requires:
Mix + butter + water + blueberries.
To make them a little healthier and to add some protein, I did:
Mix + plain whole milk yogurt + milk + blueberries
The direct substitution of the yogurt for butter and milk for water made these a wonderfully balanced way to start the day. And yes, they were sweeter than muffins I’d normally make myself, but my husband was so happy to have a “real muffin” and L and I thought they were really delicious. Warm out of the oven, the edges were slightly crisp, but the interior was incredibly moist and flavorful. Honestly, they pretty much taste like cake! And while I won’t stop baking from scratch completely, these were a really nice treat.
