We eat a lot of pancakes in our house but it wasn’t until recently that I tried making an oven-puffed pancake. I always thought that since they look so impressive, they must be difficult. But it turns out they are incredibly easy to mix together and much easier to cook since there’s no standing by the stove required. And they tend to be soft and custardy on the inside, so they are great for little ones to munch on.

(You can also make this with your favorite gluten-free flour blend, but know that it won’t puff up quite as nicely.)
