We eat a lot of muffins in our house because they are so easy. Easy to make, easy to serve, and easy to store any leftovers. I change up the kind that we have from week to week but we love a good cornbread muffin.
This version includes a nice dose of mashed roasted sweet potato for a little extra nutrition. The sweet potato also adds moisture and a touch of sweetness, that pairs really well with butter and a drizzle of honey, if you’re so inclined. We like them with chili or soup, or alongside eggs in the morning, though they also make a pretty yummy stand alone snack.
