If your house is anything like mine, your toddler probably doesn’t always eat everything on their plates. And when it comes to fruit, I feel like we’re always facing a pile of leftovers. Instead of tossing or composting them, I’ve started to turn them into a really yummy treat: Leftover Fruit Freezer Pops!
Portion sizes of fruit can be tricky. Whole fruit is often too large for a toddler to eat at once and you the parent might not want to be responsible for eating the leftovers at every meal. And even if you cut the fruit up, you still might have some leftover—and it doesn’t always store well in the fridge.
The easiest way to rescue uneaten fruit is to stash it in a zip top freezer bag in the freezer. (Of course, trim off any bitten pieces and wash as needed.) Then, whenever you have time, you can turn the bag of fruit into popsicles, essentially tempting your toddler to eat the fruit they once passed over.
You can vary this as needed depending on what you have on hand—I usually store sliced bananas in one freezer bag and all other fruit in another—and you can play around with additions. I used coconut milk here for a version that’s super creamy and dairy-free, though you can also use regular yogurt or even juice if you want.
Leftover Fruit Freezer Pops
The freezer pops shown here are made with blueberries, orange, and bananas, which is why they are so purple! You can thaw the fruit overnight in the fridge or let it sit at room temperature for 30-45 minutes to soften enough to blend easily.
Makes about 4
- 2 cups frozen fruit, slightly thawed
- 1 cup coconut milk, plain yogurt, or juice
- 1-2 tablespoons honey (optional)
- Blend the ingredients together until very (very) smooth. Freeze in your favorite freezer pop molds for 3-4 hours before serving.
Try throwing in a handful of baby spinach, a ripe banana, or a bit of nut butter.
