I recently had a pretty intense craving to bake a classic vanilla cake. And since I can’t help myself, I did have to make a few changes—and the result was this super simple Vanilla Layer Cake with Strawberry Frosting.
It has the classic texture and crumb that you expect in this sort of a cake, but with less sugar than similar recipes both in the cake and the frosting. In short, it’s a really yummy option for birthdays, special occasions, and curing those random cake cravings!
I don’t bake cakes often, but I do think that there’s something to be said for doing it up whenever I do!
One way that this cake is less sweet than similar versions is that it has a strawberry cream cheese frosting instead of one made with powdered sugar. So it’s super creamy without being too sweet—and it’s a perfect pair with the tender cake and the freshly sliced strawberries tucked between the layers.
