I’m not quite sure how it happened, but L is obsessed with shrimp. And since we don’t often have it at home, it’s one of our favorite things to order at a restaurant. Which means that this easy Sheet Pan Shrimp and Veggies made her so happy on the recent night that we had it—and it was so simple to make!
From a budgeting standpoint, shrimp isn’t always within reach. It can be almost twice as much per pound as other sources of meat or fish protein, so I usually don’t even think twice about it. I did find a decent price for a frozen pound with the shells and tails on, and hope to make this an occasional splurge. It’s nice to go into a meal knowing that the little one will be excited about it!
