We’ve been getting lots of potatoes in our weekly CSA boxes and turning them into “boats” is a favorite dinner with my oldest. They have great flavor, a bit of cheese, and a tender potato shell. Which means they are both super comforting and also pretty nutritious. If you’ve ever made twice-baked potatoes, the method will be familiar to you and if not, you’re in for a real treat!
