This week’s lunch is dairy- and nut-free, making it a nice option for a toddler with allergies, goes to a school that’s nut-free, or just for a day that calls for a lighter summer lunch. The assortment is a nice collection of finger foods that are colorful and yummy in their own right—though I make no guarantees that your kid won’t eat the hummus straight with his fingers! Serve this lunch with milk or water, as you prefer.
Lunch (shown in the 1-cup Lifefactory food storage container):
- Halved grapes
- Sliced red pepper
- Sliced kolhrabi (you can use cucumbers if you have those more readily available)
- Black bean hummus*
- Happy Munchies Rice Cakes
- Graham crackers
*To make the black bean hummus, which is nice and mild, blend together 1-cup black beans, 1 tablespoon tahini paste, 2 tablespoons fresh lemon juice, 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/2 teaspoon cumin (optional) in a food processor. Add 1-2 tablespoons water as needed to make a smooth consistency.
