One of the mistakes I made when I first started packing lunches was to overcomplicate things. Since then I’ve learned that often, the simpler the better—especially for toddlers. Today’s lunch idea requires cooking some rice and thawing some veggies, but I’m going to give you some tips to make those steps easier and to assemble this wholesome and yummy assortment in just minutes.
In the lunch, which is packed in the Lunchbots container, we have:
- Chickpeas: rinsed and drained if canned, or cook up a big batch on the weekend and freeze them to use whenever you need them.
- Short grain brown rice: Every Sunday, I make a big batch of grains. We usually eat it throughout the week, but often I freeze half. Simply let it cool then portion out 1/2 cup or a cup and freeze in a zip top freezer bag with as much air removed as possible. It thaws quickly in the fridge. My girl likes rice with just a bit of butter, but you could also do a drizzle of olive oil and salt or a little toasted sesame oil and soy sauce,
- Thawed frozen veggies: Keep a big bag of veggie medley in the freezer and thaw out a portion when you need it. I just used the green beans and carrots here. To thaw, simply place into a bowl and cover with hot water. Drain and pat dry.
- Halved grapes: Grapes can be quite large, but no matter their size, they are considered to be a choking hazard so opt to slice them in half.
- Fruit leather: We like this brand of fruit leather since it’s not too sticky and it’s all-natural.
Serve this idea with milk or water, as you like.
