Get lunch packed and everyone out the door with this make-ahead toddler lunch idea. You can roast the veggies on the weekend and add them to lunches through the week. The components (apart from the toddler trail mix) make great toppings for leafy greens, so you can pack yourself a lunch while you’re at it. Here’s what’s in this packed lunch:
- Hard-cooked egg.
We get fresh eggs, which are difficult to peel if hard-cooked the regular way. Instead, I simply cook them for about 12 minutes in our egg-poaching pan, no peeling required. (Baking them also works pretty well.) Dice it or leave it whole depending on how your little likes it.
- Roasted veggies.
Toss diced zucchini, carrot, and yellow squash together with a drizzle of olive oil and a sprinkle of salt and pepper. (4 cups veggies to 1 tablespoon olive oil is generally a good ballpark.) Roast on a rimmed baking sheet at 400 degree F for 20-25 minutes or until soft and golden brown.
- Trail mix.
Mix no- or low-sugar cereal like Cheerios or Kix with snipped dried fruit. You could also add dehydrated fruit, pumpkin seeds, or chopped walnuts or sliced cashews.
Send milk or water and snacks as needed.
