For this week’s Yummy Toddler Lunch, we have another super simple meal in the LunchBots container. This lunch is ideal for a 1 or 2 year old, though you can of course serve it to an older eater (or even yourself!), adjusting portion sizes as needed. The container is best for dry foods and it holds more than you might think at first glance. Here’s at look at this week’s lunch idea:
Serve with milk or water, as you like.
- Hummus (with shredded carrot instead of the squash called for in that recipe) on whole grain bread
- Roasted sweet potatoes (cube, toss with olive oil and salt and roast on a rimmed baking sheet at 375 F for 20-22 minutes)
- Homemade fruit leather (this is a recipe we like)
- Strawberry drinkable yogurt (we like Siggi’s since it’s low in added sugar and often is on sale at one of our local markets) in a Lifefactory bottle and Sippy Cap.
- Banana and Mighty 4 Bar
