For so many kids I know, today is the first day of school. Outfits are ready, camera’s are primed, and lunches are packed—or will be soon enough. This lunch idea is one with a main dish that you can make ahead of time and use once or twice throughout the week, And while it suddenly feels like fall outside here in the Midwest, I know it’s still summer since there’s still plenty of sweet corn around! Serve this with milk or water and adjust portion sizes as needed to fit your child’s normal appetite.
In this lunch:
- Pasta with pesto: This is kale pesto, made using the same method as this Spinach Pesto recipe, just with kale swapped in, gluten-free pasta, and fresh sweet corn that’s simply removed from the cob and stirred into the pasta when it’s warm. (You can use your kiddo’s favorite pasta!) It can be eaten cold or at room temperature.
- Cheddar cheese: A little diced cheese adds some protein and calcium.
- Blueberries: You can slice berries in half for younger toddlers.
- Whole grain cookies: The first day of school deserves a treat right? We love these Superhero Cookies now and then.
