Serving up a quick meal to your hungry toddler can be easy when you embrace simple meals. This shortcut meal idea is colorful, fun, and has a balanced mix of nutrients to fill your toddler’s belly.
At this time of year, when there is so much fresh produce on hand, I like to make that the star of the plate. I don’t expect that my daughter will always eat it all, but by giving her a few options, it increases the likelihood that she’ll try some of it. She gets to make that choice for herself from the mix of foods I give her and it usually makes for a happy meal time since she gets to exert some power. Here’s the rundown on the rest of the items in this meal:
Carrot strips: These are simply done with a vegetable peeler and are nice and soft for little eaters.
Cherry tomatoes: L used to get a rash from red tomatoes (and strawberries) on her cheeks when she was younger—from the acid we think—so we still often defer to yellow or orange tomatoes like these Sungolds since they are less acidic. Cut them in half to reduce choking hazards.
Blueberries: These berries are at the peak of their season right now, so scoop them up when you see them at the market. (In our area, the ones from Michigan have been outstanding!)
Cream cheese and jam sandwich: A simple sandwich cut with cookie cutters is a fun element to any toddler plate. (I save the crusts in a freezer bag to make bread crumbs at a later date.)
Hero cookies: Just a few of these whole grain cookies go a long way and we love all of the flavors.
