Meatballs have always been one of L’s favorite foods, ever since she was very little. She loves them most when Mom-Mom makes them and when they are covered in red sauce, but every so often I try to serve them up in a new way to make sure that she doesn’t get too stuck liking them only one specific way. this Meatball Soup is our new favorite way to enjoy them.
You can make this recipe on the stove top or in the slow cooker and it’s really quite simple. Plus, you can use an assortment of veggies that you have on hand, making it a great option for when you need to clean out the fridge. Taste-wise, it’s sort of a cross between spaghetti and meatballs and minestrone, so it’s perfect for a crisp autumn day.
And I know that brothy-soups can sometimes be tricky for toddlers—by which I mean they can get messy fast!—so simply strain out the ingredients as you serve them to your little one so they have less liquid. Though note that if you happen to make this much ahead of time, much of the broth will be absorbed as the dish sits.
This is the sort of dinner dish that I love: One bowl, filled with a variety of ingredients for little ones to enjoy, and totally satisfying.
