Banana Waffles Recipe



– 1/2 cup mashed banana (from about 1 very ripe medium banana) – 1/2 cup milk – 1 large egg (lightly beaten) – 2 tablespoons coconut oil (or butter; melted and cooled slightly) – 1 teaspoon vanilla extract – 1 cup whole wheat flour – 2 teaspoons baking powder – 1 teaspoon cinnamon – 1/4 teaspoon salt

Step 1.

Add the banana, milk, egg, coconut oil, and vanilla to a medium bowl. Stir to combine.

Step 2.

Stir in the flour, baking powder, cinnamon, and salt. (The batter will be thick.)

Step 3.

Place about 1/3 cup of batter into the center of warmed waffle iron. Spread it a little with a spoon, and close the lid.

Step 4.

Let cook according to the waffle iron's settings.

Step 5.

Serve warm with syrup, fruit, jam, applesauce, or nut butter.
