How to Make Healthy Pancakes (with Carrots!)

Nourish hungry kids (and adults!) with these easy and healthy pancakes. The recipe combines nutritious ingredients into delicious pancakes that taste like carrot cake.

Step 1

Soften shredded carrots in very hot water in a bowl. Drain and pat dry with a clean kitchen towel.

Step 2

Add the eggs, applesauce, yogurt, melted and slightly cooled unsalted butter, and vanilla extract to a bowl.

Step 3

Stir the wet ingredients together with a spatula. to make a smooth mixture  Add the softened carrots.

Step 4

Stir in the flour, baking powder, and cinnamon, and stir gently to make a smooth pancake batter.

Step 5

Warm a pan over medium heat and add butter to melt. When melted, swirl to coat the pan. Drop batter onto the pan.

Step 6

Cook each pancake round  until the edges are set and little bubbles appear around the edges.  Then get ready to flip.

Step 7

Flip the pancakes over gently with a spatula and cook until each is lightly browned and cooked through.

Step 7

Serve the Carrot Pancakes with a side of  maple syrup, fruit puree, sliced fruit or other toppings.
