Mini Bacon and Egg Muffins

Easy recipe for Easter brunch or an easy weekday breakfast by expert Amy Palanjian

Step 1

Place eggs into a medium sized bowl and whisk lightly to create an even mixture. Use a fork or a small whisk for this step.

Step 2

Add in the cheese and herbs, such as thyme or rosemary, if using to add more flavor to the egg muffins.

Step 3

Take your crisp-cooked bacon and pat dry with a paper towel. Cut into small pieces or crumble into the egg muffin batter.

Step 4

Stir in the bacon, add spinach if desired, and portion out batter into a well-greased mini muffin tin. Be sure to grease it well with nonstick spray.

Step 5

Bake for around 16 minutes at 375 degrees F, or until cooked through and puffy. Let cool for a few minutes, then use a knife to loosen from the oan.

Step 6

Cool slightly on a wire rack and serve, or you can store in an airtight container and reheat for brunch or breakfast.
