This frosting has a bright strawberry flavor, is so delicious and it is ready in minutes!
- Freeze-dried strawberries - Cream cheese - Unsalted butter - Pure vanilla extract - Maple syrup or honey
Grind the freeze-dried strawberries into a powder with a blender or food processor. I use freeze-dried strawberries here since their flavor is intense and they don’t add any extra moisture.
Add the cream cheese, unsalted butter, maple syrup (or honey), and pure vanilla extract to a mixing bowl.
Add your ground up freeze-dried strawberries to the bowl with the other ingredients. Powdered sugar is optional but you can add it now as well.
Blend well using a handheld electric mixer on high speed. Make sure the cream cheese and butter is at room temperature so it’s very soft to the touch. This will help it mix up smoothly.
Keep mixing the frosting with a handheld mixer until it is evenly mixed and fluffy. Look at that pretty pink color!
Transfer to a zip-top quart-size bag. Seal. Cut off one bottom corner and pipe onto cupcakes. (You can also just use a spatula to frost onto a cake.)
Top with sprinkles if desired. You can make this up to 24 hours ahead and store in a plastic zip-top bag in the fridge until ready to use.
Tip: Use freeze-dried blueberries in place of the strawberries if you’d like a different flavor and color!
