I started making this when I had a lot of leftover crusts from kids sandwiches that I didn’t want to go to waste. I popped them into the freezer until I had enough to use for this recipe!
Add the eggs, milk or cream, vanilla, and cinnamon to a bowl. Whisk to combine thoroughly. I prefer whole milk if using milk.
Preheat the oven to 350 degrees F and grease an 8×8-inch baking pan with nonstick spray or butter. Add the bread to the pan.
Pour the egg mixture over the bread and stir very well to coat the bread. You want it to all look very moist.
Add the fruit to the top of the bread, pressing down a little. This recipe works with a wide range of fruits such as blueberries, sliced strawberries, sliced bananas, or diced peaches.
Cover with foil and bake for 20 minutes. Remove the foil and bake for another 20 minutes. You can double the recipe to bake in a 9×13-inch pan. It may need 4-6 minutes longer to bake.
Serve warm with maple syrup, yogurt, whipped cream, or any other desired toppings that your family enjoys.
Store leftovers wrapped in foil or transferred to an airtight container in the fridge for 3-5 days. Warm to serve.
