Healthy Zucchini Muffins

– 2 cups roughly chopped zucchini – 1/2 cup rolled oats – 1 teaspoon cinnamon – 1 teaspoon baking powder – 1/2 teaspoon baking soda – 1/4 teaspoon salt – 1/2 cup unsweetened applesauce – 1/2 cup neutral oil – 1/4 cup maple syrup – 1 teaspoon vanilla extract – 1 1/2 cups whole wheat flour – 1/2 cup mini chocolate chips (optional)

Ingredients

Step 1.

Add zucchini to the bowl of a food processor and process until well grated, about 30 seconds.

Step 2.

Add the rest of the ingredients, except the flour and chocolate chips, and process for 30 seconds.

Step 3.

Add the flour and chocolate chips, if using, and pulse to just combine.

Step 4.

Divide batter among the prepared muffin tin, using about 1 1/2 tablespoons batter per muffin cup.

Step 5.

Bake for 18-20 minutes or until a cake tester inserted into the center comes out cleanly.

Step 6.

Remove from oven and let cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
