Favorite Gingerbread Muffins

A delish and nutritious breakfast to share with the kids.

You Need:

– 1 cup plain whole milk yogurt – 2 eggs – 1/4 cup unsalted melted butter  – ¼ cup molasses – 1 teaspoon vanilla extract – 1 1/4 cups whole-wheat flour – ¼ cup brown sugar  – 1 teaspoon baking soda – 1 teaspoon cinnamon – 1 teaspoon ground ginger – 1/4 teaspoon allspice (or cloves) – 1/4 teaspoon salt

Step 1.

In a large bowl, whisk together the yogurt, eggs, butter, molasses, and vanilla. smooth.)

Step 2.

In a separate medium bow, whisk together the flour, brown sugar, baking soda, cinnamon, ground ginger, allspice, and salt.

Step 3.

Gently fold the flour mixture into the yogurt mixture.

Step 4.

Divide the mixture among the prepared muffin tin. Add coarse sugar if desired.

Step 5.

Bake for 14-16 minutes at 375 degrees F.

Step 6.

Let cool fully on a wire rack.
