Healthy Chocolate Chip Muffins

Ingredients

– 1 cup all-purpose flour – 1 teaspoon baking powder – 1/2 teaspoon baking soda – 1/4 teaspoon salt – 1 cup whole milk plain Greek yogurt – 1/3 cup maple syrup (or sugar) – 1/4 cup unsalted butter (melted and slightly cooled) – 2 eggs (lightly beaten) – 2 teaspoons pure vanilla extract – 3/4 cup mini chocolate chips

Step 1.

Stir together the yogurt, maple syrup, eggs, melted butter, and vanilla.

Step 2.

Gently stir the yogurt mixture into the flour mixture. Gently stir in the chocolate chips. The batter will be thick.

Step 3.

Divide batter among the prepared mini muffin tin, filling about to the edge.

Step 4.

Bake for 10-12 minutes, or until the edges are lightly golden brown and a cake tester inserted into the center comes out cleanly.

Step 5.

Let cool in the pan for 2 minutes then carefully transfer muffins to a wire rack to fully cool.

P.S. You can also swap in blueberries for the chocolate chips!
