Blueberry Muffins

Learn how to make healthy blueberry muffins packed with berries and protein with this one simple method.

– all-purpose flour – sugar  – baking powder – baking soda – salt – whole milk yogurt  – unsalted butter  – eggs – pure vanilla extract – blueberries – lemon zest and juice


In a medium bowl, stir together the flour, sugar, baking powder, baking soda, and salt to evenly combine the dry ingredients.


In another bowl, stir together the yogurt, eggs, butter, and vanilla with a whisk to make a smooth batter.


Gently stir the yogurt mixture into the flour mixture to evenly combine the batter without overmixing.


Stir in the blueberries gently, taking care not to over-mix or break up the berries. A spatula is helpful here.


Divide batter among the prepared muffin tin, filling about to the edge. (You'll use about 1 ½ tablespoon in each mini muffin cup.)


Bake for 10-12 minutes, or until the edges are lightly golden brown and a cake tester inserted into the center comes out cleanly.


Remove from the oven and let cool in the pan for 2 minutes. Then carefully transfer muffins to a wire rack to cool fully.


These taste like Little Bites blueberry muffins, but are less expensive and made with nutritious ingredients. And they store so well so you can enjoy them all week!
