Easy Spinach Muffins

Ingredients You Need

Very ripe banana, baby spinach, milk, honey, butter, eggs, vanilla extract, rolled oats, baking soda, salt, whole-wheat flour, chocolate chips (optional)

Step 1.

Add banana, spinach, and milk to a blender. (Use ripe banana and any type of milk you like, whether dairy or nondairy.)

Step 2.

Add honey, melted butter, and vanilla extract to the blender. You can trade in maple syrup for the honey if you prefer.

Step 3.

Add rolled oats, baking soda, and salt. Cover and start to blend the batter. (Be sure to use baking soda that's fresh for best results.)

Step 4.

Add the whole-wheat flour to the blender and pulse in to form a uniform batter. Try not to overmix.

Step 5.

Add the batter to a greased muffin pan, using about 1/4 cup batter in each. Sprinkle with chocolate chips if desired.

Step 6.

Bake in a 375 degree oven for 18-20 minutes or until a toothpick inserted into the center comes out cleanly.
