Ingredients

Applesauce,  butter, egg, milk, vanilla extract, whole wheat flour, rolled oats, sugar, baking powder and soda, cinnamon, and salt

Step 1

Stir together the applesauce, butter, milk, egg, and vanilla in a medium bowl to make a smooth mixture.

Step 2

Add the flour, oats, sugar, baking powder, baking soda, cinnamon, and salt and gently fold together.

Step 3

Fill prepared muffin tin to the edge of each cup. (Be sure to coat the pan well with nonstick spray.)

Step 4

Optional: Sprinkle each muffin with a little cinnamon and sugar. for extra flavor and texture.

Step 5

Bake at 375 F for 16-20 minutes or until lightly browned around the edges and cake tester inserted into the center comes out cleanly.

Step 6

Remove from oven, let cool for about 2 minutes in the pan, run a paring knife around the edges if needed, and remove to cool on a wire rack.
