Pumpkin Oatmeal Muffins



– 2 cups rolled oats – 1 cup pumpkin puree – 1 cup milk – 1/3 cup maple syrup – 2 eggs – 1 teaspoon vanilla extract – 1 teaspoon pumpkin pie spice – 1 teaspoon baking soda – ¼ teaspoon salt – 1/4 cup chocolate chips optional

Step 1.

Place all of the ingredients into a blender or food processor except the chocolate chips.

Step 2.

Blend until very smooth, stopping to scrape down the sides of the bowl if needed.

Step 3.

Divide among the prepared muffin tin. You want each cup to be about ¾ full. Top with chocolate chips if using.

Step 4.

Bake for 20-22 minutes or until firm to the touch and lightly golden brown around the edges.

Step 5.

Let cool in the pan for 5-10 minutes, then transfer to a wire rack to cool.
