Easy recipe for Easter brunch and breakfast by expert Amy Palanjian
Gather your ingredients, including pantry staples plus fresh or frozen blueberries, yogurt, and lemon.
Mix together the dry ingredients in a bowl, including the flours, baking powder, baking soda, and salt.
Melt the butter and allow to cool slightly. Lightly beat the eggs in a small bowl to combine them and add air.
Stir the yogurt, honey, butter, eggs, vanilla, and lemon zest into the dry ingredients. (The batter will be thick.) –
Gently stir in the blueberries to evenly incorporate them into the batter. (This works with fresh or frozen berries.)
Divide the mixed batter among the prepared greased muffin tin, using about ¼ cup batter in each cup.
– Bake for 18-20 minutes, or until golden brown around the edges and a cake tester inserted into the center comes out cleanly.
