Mini Pumpkin Cupcakes

with cream cheese frosting!




Pumpkin Cupcakes -1 cup pumpkin puree -1/2 cup vegetable oil -1 teaspoon vanilla extract -1 cup all purpose flour -1/2 cup  sugar -2 teaspoons pumpkin pie spice 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt

Cream Cheese Frosting - 8 ounces cream cheese 2 tablespoons maple syrup 1/2 teaspoon vanilla extract

Step 1.

Stir together the pumpkin puree, oil, egg, and vanilla in a large bowl.

Step 2.

Stir in the flour, sugar, pumpkin pie spice, baking powder, baking soda, and salt.

Step 3.

Portion the batter evenly into the prepared muffin tin using about 1 tablespoon in each cup.

Step 4.

Bake for 12-14 minutes or until a cake tester inserted into the center comes out cleanly. Transfer to a wire rack to cool completely.

Step 5.

To make the frosting, add cream cheese to a medium bowl with maple syrup and vanilla extract. Mix together until fluffy.

Step 6.

Frost the cupcakes with cream cheese frosting, add sprinkles if desired, and serve.
