Quick  Orzo Risotto

With the creamy texture of traditional risotto, but a much faster cook time and an easier method, this is a favorite family dinner.

Ingredients

– Olive oil – Yellow onion – Reduced-sodium chicken broth – Orzo pasta – Parmesan cheese – Heavy cream – Frozen peas (optional)

– Unsalted butter – Lemon juice and zest

Mince

Peel and mince the onion.  Add the olive oil to a large skillet or medium pot over medium heat.

Cook

Add the minced onion and salt to the pan, and stir to coat in olive oil.  Cook for 4 minutes over medium heat.

Simmer

Add the broth and water, cover, and bring to a simmer. Add the orzo and cook for 10-12 minutes, stirring occasionally.

Simmer

Keep simmering the orzo until the liquid is almost completely absorbed and the pasta is tender.

Stir

Stir in the Parmesan, cream, butter, and peas and lemon juice and zest, if using. Season to taste with salt and pepper as you like. Serve warm.
