Sweet Potato Cake

with Cream Cheese Frosting

Step 1.

In a large bowl, whisk together the sweet potato, oil, maple syrup, egg, and vanilla.

Step 2.

Stir in flour, cinnamon, baking powder, baking soda, and salt to just combine.

Step 3.

Divide the batter among the prepared pans, using about a heaping cup in each. Smooth to spread the batter evenly.

To make the frosting:

Add the cream cheese to a medium bowl with maple syrup and vanilla extract. Mix together with a whisk until fluffy.

To assemble the cake:

Place one cake on a stand or plate. Frost with 1/2 of the frosting.

Place the second cake on top and add the remaining frosting. Spread evenly and add sprinkles if desired.
