Ingredients

  • 3 pounds ripe peaches (about 5-6 cups diced)
  • 2 tablespoons honey (increase or decrease as desired)

Instructions

  • Wash and peel the peaches with a paring knife or vegetable peeler.
  • Dice roughly and add to a medium pot. Add 1 cup water. Cover and bring to a simmer over medium heat, then remove the lid and cook for 25-30 minutes, stirring occasionally, or until peaches are soft when poked with a fork.
  • Stir in the honey, as desired according to how sweet you want them.
  • Mash slightly if desired, or serve as is with or without the liquid.
  • Serve as a simple side or over yogurt or oatmeal.

Notes

  • Store leftovers in an airtight container in the fridge for 3-5 days.
  • To freeze, let cool fully and place into a freezer container. Freeze for up to 6 months. To use, thaw overnight in the fridge and serve cold or slightly warmed.
  • Serve cold as a simple fruit side dish or with yogurt. (You can even blend the peaches with plain yogurt and serve it in a reusable pouch.)
  • Serve warm with oatmeal as another option.
  • Sweeten to taste as desired. The sweetness of peaches can vary a lot, so taste the fruit once it's cooked and add sweetener as needed. I like honey, but maple syrup works too.
  • You can blend this into a simple peach puree if desired.
