Quick Pizza Quesadillas (An Easy Kids Meal)

This meal is perfect for when you're short on time or when you want to make pizza with less fuss. Add a simple side of cut up fruit, applesauce, or a salad kit and call it good.

Ingredients

  • 2 tortillas (fajita size; "soft" ones will be easiest for little kids to chew)
  • 2 tablespoons pizza sauce
  • 1/4 cup shredded mozzarella
  • 1 tablespoon grated Parmesan (optional)
  • Assorted other pizza toppings, as desired (see Notes below)

Instructions

  • Place a large nonstick or cast iron skillet over medium heat.
  • Spread the pizza sauce on one tortilla. Add the cheese. Top with the second tortilla.
  • Place into the skillet and cook for 3 minutes.
  • Flip over with a spatula and cook for an additional 3-4 minutes, or until golden brown and the cheese is melty.
  • Remove from pan and use kitchen scissors or a serrated knife to cut into wedges.

Notes

  • Use tortillas labeled "soft" for ones that are easiest to chew.
  • Try flour, whole-wheat, or a flour-corn blend of tortilla.
  • Add any other favorite pizza toppings, chopping them small so they're easy to chew and bite. Try pepperoni, cooked sausage, cooked broccoli, cooked mushrooms, or sliced mushrooms.
  • Pack warmed in a thermos for an easy hot lunch.
  • Dairy-free: Use nondairy shredded cheese.
  • Gluten-free: Use a gluten-free tortilla.
