Ingredients

  • 1 whole wheat pita bread
  • ¼ cup hummus
  • ¼ cup thinly sliced cucumber, carrots, lettuce, and/or cherry tomatoes
  • 1 ounce cubed cheese (optional)
  • ½ cup sliced fruit (optional)

Instructions

  • Cut the pita bread into wedges and serve with the hummus and desired veggies. Add cheese and a side of fruit if desired.

Notes

  • Warm the pita bread slightly if desired.
  • Very thinly slice raw veggies and the bread for toddlers to ensure it's easy to chew.
  • Think of a main item for lunch, then surround it with a few other types of foods such as fruit, veggies, dairy, whole grains, and a drink.
  • Add peanut-free snacks or lunch snacks as needed to make any idea more filling.
  • Take shortcuts as needed, including salad kits, precooked rice, canned beans, and frozen veggies.
  • Include a drink with lunch, such as milk or water.
  • Invest in durable lunch boxes if you'll be sending lunches to school or daycare.
