With just a few ingredients and the easiest method, you can make the most comforting Tortellini in Broth. It's one of the easiest soups ever, ready in just 15 minutes.
Add the broth to a medium pot set over medium-high heat. Bring to a simmer. Turn down to medium to keep it from boiling.
Add the tortellini and cook according to package directions. Usually it's about 3 minutes.
Add the peas and turn off the heat. They will warm through as it sits briefly.
Serve with lemon juice, Parmesan, and cracked black pepper as you like.
Notes
Store leftovers in an airtight container for up to 5 days in the refrigerator. Warm in a heat-safe bowl in the microwave or in a small pot on the stove.
You can use any type of broth you prefer, including chicken broth, reduced-sodium chicken broth, my Vegetable Broth with three vegetables blended in, or bone broth.
You can use a handful or two of spinach in place of the peas if you prefer.
You can omit the peas.
The fresh lemon juice adds a nice flavor, but it's optional.
