With an easy method and a delicious taste, this easy Fruit Pizza is such a fun dessert to share with the kids. It's the best of all worlds with a sugar cookie crust, cream cheese frosting, and fresh fruit on top!
Roll the cookie dough out into a ½-inch thick circle on a piece of parchment paper. Transfer to a baking sheet and bake for 12-16 minutes, or until firm to the touch and lightly golden brown around the edges.
Remove the crust from the oven and allow to cool fully.
Meanwhile make the cream cheese frosting by adding the cream cheese, butter, honey, and vanilla to a bowl. Beat until smooth with an electric mixer.
Spread the frosting over the cookie base.
Arrange sliced fruit on top of the frosting as desired.
Slice and serve.
Notes
Store leftover Fruit Pizza, covered well with plastic wrap or sliced and put into an airtight container, in the refrigerator for up to 3 days. (Depending on the fruit you use, some of the slices may discolor slightly.)
Use purchased sugar cookie dough or make a batch of my Easy Sugar Cookie dough to use in the recipe.
Use vegan cream cheese and butter as needed to make this recipe dairy-free.
Use any combination of sliced fresh fruit you prefer. (Avoid bananas, apples, and pears if it will sit for any length of time as they will brown.)
