Zucchini Pizza Bites (Oven or Air Fryer)
With just 4 simple ingredients, these Zucchini Pizza Bites are a great way to serve zucchini to kids and a fun variation on pizza. You can bake or air fry them, too.

Ingredients

medium zucchini
olive oil spray
½
cup
pizza sauce
1
cup
shredded mozzarella
Pepperoni, grated parmesan, fresh basil
Instructions
Preheat the oven to 375 degrees F and line a rimmed baking pan with parchment paper. Spray with olive oil.
Slice zucchini into ¼-inch thick rounds and place onto the prepared pan. Spray lightly with olive oil.
Bake for 18 minutes or until just soft.
Top each slice with a little pizza sauce, cheese, and any toppings you like.
Bake for another 8-10 minutes or until the cheese is melted and lightly golden brown. Serve warm.
Notes
Store leftovers in an
airtight container
and store in the fridge for up to 5 days. Serve leftovers warm.
Add minced fresh basil for more fresh flavor.
Add toast, Italian bread, focaccia, pasta, or another simple side to round out the meal.
