With the flavors of pizza, the option to use any favorite pizza toppings, and a 5 minute cooking method, this Omelet Pizza is a favorite quick meal to share. This works for breakfast or any time of day!
Add the eggs and the milk to a large bowl and whisk lightly to blend.
Warm a small nonstick skillet over low heat. Add butter and swirl to coat and melt.
Add the egg mixture to the pan and let set for 30 seconds. Using a spatula, gently push the cooked eggs toward the center of the pan, tilting the pan as needed to allow the uncooked egg to flow underneath. Continue until the eggs are mostly cooked.
Spread the pizza sauce, cheese, toppings, if using, on top of half of the eggs. Sprinkle with the oregano.
Cover for 2 minutes to fully cook the eggs, then remove cover and fold over the plain side of the eggs. Press down lightly to make the omelet.
(To make this look more like a pizza than an omelet, place the sauce, toppings, and cheese over the entire egg base and cover to melt the cheese and warm through.)
Lift out onto a plate or cutting board. Let cool slightly, then slice into wedges and serve with pizza sauce, if desired.
Notes
Store leftovers, once cooled, in an airtight container in the refrigerator for up to 5 days. Warm on a heat-safe plate in the microwave for 15-30 seconds.
Use any fresh veggies you like. Just slice thinly or mince before adding to the pan to ensure they cook through. You can also use frozen veggies in small pieces.
Use dairy-free cheese or omit the cheese if desired.
Sprinkle with fresh herbs before serving to adults if desired.
Serve with extra pizza sauce for dipping if desired.
